I started making our own strawberry topping and with strawberries available now (sigh. imported, not local yet but fresh strawberries nonetheless), we are just loving this yummy goodness. Mmmm ... ....
And to make this, all you need are a pound or half a kilo (not the same but this is homecooking, not an exact science, right?) of strawberries, a third cup of sugar (more or less, whatever you prefer) and a teaspoonful of vanilla extract. Cook it at medium heat for about five minutes. Take about a quarter to a third of it out and into a blender. Blend to a puree and then add it back to the mixture and cook it at that same medium heat till it thickens up. I like the strawberries whole and not too mushy so I adjust the process depending on what happens when.
Trust me, it really does work and you will have yummy strawberry goodness atop your vanilla ice cream.
